Premium Sake “Nihonshu” is brewed with special rice which is milled to remove the starch component, known as shinpaku or white heart. Polishing the rice removes the proteins, fats and amino acids which produce unwanted flavors and aromas during the brewing process. The more the rice is milled before brewing, the higher the grade of sake. Junmai is also referred to as the pure version of sake. This means that sakes with the word junmai has been made with only rice, without distilled alcohol, additional starch or sugar. This is the original and traditional method of brewing sake.
